Guinness chocolate pie with beer marshmallow meringue recipe

Following on from Tayto?s release of the cheese and onion chocolate bar in Ireland we?ve realized that we are a nationality divided by whether putting salty and sweet together in a dessert is really disgusting or completely delicious.

Of course there?s the obvious American favorite, the chocolate covered pretzel, more commonly known in Ireland as the brand Flipz, but then there are the breakaway groups who will break up a Dairy Milk chocolate bar and drop it into their popcorn at the cinema or even branch out and go for Galaxy Minstrels.

If you?re one such delinquent then we?ve found a most scrumptious recipe for you - Guinness chocolate pie with beer marshmallow meringue.

Pretzel crust:
Ingredients:
2 cups crushed pretzels
1 cup graham cracker crumbs
10 tbsp. unsalted butter, melted
1/4 cup plus 2 tablespoons light brown sugar (firmly packed)

Preheat oven to 350 degrees.

In a medium bowl, mix together pretzels, graham cracker crumbs, butter and brown sugar.? Stir together with a rubber spatula until well incorporated.

Divide mixture between two 8 or 9-inch pie plates. Bake for 10 minutes.? Cool completely before filling.

Guinness chocolate filling:

Ingredients:
8 large egg yolks
1 cup sugar
14.9 oz. can Guinness Draught, divided
2 1/4 cups heavy cream
7 oz. high quality bittersweet chocolate, evenly chopped
1/4 cup cornstarch

Method:

Whisk together egg yolks and sugar in a non-reactive bowl.

Pour 1 cup of Guinness in a heavy-bottomed 3-quart saucepan (reserve the rest for later use).

Add heavy cream and whisk to combine.

Set over medium-high heat and cook until very hot but not boiling.

Remove from heat and whisk in chocolate.

When chocolate has melted, whisk in the egg mixture in a very thin stream as to not scramble the egg.

Whisk in cornstarch and return to heat source.

Whisk over medium heat until thickened.

Divide mixture between pie pans.

Use a rubber spatula to effectively remove all the pudding from the saucepan; quickly smooth the chocolate into the crust.? Refrigerate while making the marshmallow topping.

Beer marshmallow topping:

Ingredients:
2 cups sugar
4 egg whites
1/4 cup plus 2 tbsp. water
1/4 tsp salt
12 jumbo marshmallows (or about 18-20 large) cut into quarters with kitchen scissors
3 tbsp. beer reduction

Method:

Whisk sugar, egg whites, water and salt together in a large metal bowl.

Set bowl over a simmering pan of water; whisk constantly until sugar dissolves and mixture is hot to the touch.

Six strangled, one decapitated in Mexican resort of Cancun

CANCUN, Mexico (Reuters) - Six people were found strangled to death and one decapitated in the southern Mexican tourist resort of Cancun on Sunday, the state's deputy attorney general said, in the latest mass killing to strike the city in the last few weeks.

Police found the bodies of the five men and two women in a shack in the outskirts of Cancun, a major tourist destination on Mexico's Caribbean coast, that has largely escaped the drug-related violence that has racked Acapulco, a faded tourist destination on the Pacific coast.

"It looks like the victims were independent drug dealers without any links to any specific cartel," said Juan Ignacio Hernandez, deputy attorney general of Quintana Roo state.

Police later presented seven men as suspects in the killing.

Last month six people died and five were injured after two men opened fire in a bar on the outskirts of Cancun.

In a separate incident, police on Sunday found the body of another man in Cancun who had been gagged, bound and wrapped in sheets.

Mexican President Enrique Pena Nieto has promised to put an end to the violence that exploded after his predecessor, Felipe Calderon, launched a military-led attack on the warring cartels.

More than 70,000 people have been killed in drug-related violence in Mexico since 2007.

WASHINGTON (AP) ? In a blistering report, Republican lawmakers on Sunday sharply criticized Labor secretary nominee Thomas Perez over what they said was a questionable deal he brokered while serving as head of the Justice Department's Civil Rights Division.

The 63-page report, issued after months of investigation, is certain to provide fodder for Republicans seeking to challenge Perez at his Senate confirmation hearing Thursday.

The GOP lawmakers accuse Perez of misusing his power last year to persuade the city of St. Paul, Minn., to withdraw a housing discrimination case before it could be heard by the Supreme Court. In exchange, the Justice Department agreed not to intervene in two whistleblower cases against St. Paul that could have won up to $200 million for taxpayers.

Perez has defended his reason for wanting St. Paul to drop its case, telling investigators that he feared an adverse ruling from the Supreme Court would jeopardize the government's use of statistics to win housing discrimination cases. The Justice Department also says Perez got proper clearance and made the deal in the best interests of the nation.

But Republicans say the deal was dubious, that Perez misled senior officials about his intentions, and that he tried to cover up the true reason for his decision not to intervene in the whistleblower cases.

"This offer was inappropriate and potentially violated Perez's duty of loyalty to his client, the United States," said the report from Iowa Sen. Charles Grassley, California Rep. Darrell Issa and Virginia Rep. Bob Goodlatte.

Issa is chairman of the House Oversight Committee, while Goodlatte heads the House Judiciary Committee. Grassley is top Republican on the Senate Judiciary Committee.

Top Democrats on the House Oversight Committee issued their own report on the investigation Sunday, writing that Perez "acted professionally to advance the interests of civil rights and effectively combat the scourge of housing discrimination."

The Justice Department also defended Perez in a statement, saying litigation decisions made by the department "were in the best interests of the United States and were consistent with the department's legal, ethical and professional responsibility obligations."

"In resolving False Claims Act matters, the Department has broad discretion to consider legal, factual and policy factors," the statement said. "The decision to decline to intervene in these cases followed an examination of such factors and permitted the relators to continue to pursue their claims against the city."

The Republican report cites documents that suggest Perez's decision frustrated and confused career attorneys at Justice who initially wanted to join the whistleblower cases against St. Paul. These attorneys described the department's change of heart as "weirdness," ''ridiculous" and a case of "cover your head pingpong."

The report also quotes the handwritten notes from one Justice lawyer who wrote after a January 2012 conference call: "Message from Perez. When you are working on memos make sure you don't talk about Sup. Ct. case."

But Democrats claim Perez was up front about using the strategy and cleared it with ethics and professional responsibility officials before it was finalized. Associate Attorney General Tom Perrelli told investigators it was common Justice Department practice to encourage parties not to pursue Supreme Court cases with poor fact patterns that could lead to adverse national interests.

"Instead of identifying inappropriate conduct by Mr. Perez, it appears that the accusations against him are part of a broader political campaign to undermine the legal safeguards against discrimination that Mr. Perez was protecting," said the staff memo issued Sunday by Rep. Elijah Cummings, top Democrat on the House Oversight Committee, and Rep. John Conyers, top Democrat on the House Judiciary Committee.

Federal law allows whistleblower cases alleging misuse of public funds to be brought by private parties. If they win, they can keep a percentage of the proceeds while the government gets the rest. The Justice Department intervenes in about 22 percent of federal whistleblower lawsuits, a move that can give the case a better chance of winning. The department has recovered more than $13 billion from such cases over the past four years, according to Justice Department statistics.

After the Justice Department declined to join the whistleblower cases against St. Paul, one of them was later dismissed. The second is still being litigated by a private plaintiff.

Former Texas official arrested in probe of prosecutors' slayings

KAUFMAN, Texas (Reuters) - A former justice of the peace in Kaufman County, Texas, whose home was searched as part of the probe into the killings of the local district attorney, his wife and a prosecutor, has been arrested on suspicion of threatening violence, officials said on Saturday.

Eric L. Williams, 46, was arrested on Friday on charges of making a "terroristic" threat, which generally involves a threat to commit violence, according to the Kaufman County jail website. Kaufman County is just east of the Dallas-Fort Worth area.

It was not immediately clear whether the alleged threat had any connection to the slayings, which along with the March slaying of the Colorado prisons chief raised concerns about public officials being targeted by criminal elements.

Kaufman County District Attorney Mike McLelland and his wife, Cynthia, were found shot to death on March 30 at their home near Forney, 22 miles from Dallas, two months after Assistant District Attorney Mark Hasse was gunned down execution-style. McLelland had publicly vowed to capture Hasse's killer.

The arrest of Williams marked at least the third time investigators in the case have taken a person into custody over an alleged threat, and came as Texas authorities were seeking to double an existing $200,000 reward to find the killers.

Williams has not been named as a suspect in the slayings. He lost his position as justice of the peace in Kaufman County after being convicted last year of theft, according to local media reports.

His attorney, David Sergi, said in a statement on Friday that his client "has cooperated with law enforcement and vigorously denies any and all allegations," according to local news station KXAS-TV, an NBC affiliate.

Sergi did not return calls on Saturday.

SEARCH WARRANT

A jail official confirmed that Williams' bail was set at $3 million in connection with the charge against him, but she could not release further details.

Kyle Bradford, a spokesman for the Texas Department of Public Safety and the Texas Rangers, said authorities served a search warrant at Williams' home on Friday.

Richard Mohundro, who lives next door to Williams' house in Kaufman County, said he watched from his porch as police poured into the neighborhood on Friday afternoon. "There were cops everywhere and I thought, 'Oh my God,'" he said.

Officers were there until around midnight and took out bins filled with documents and computers, Mohundro said.

After the slayings of Hasse and the McLellands, investigators had tested Williams for gun residue and they examined his cell phone, but they did not name him as a suspect, according to the New York Times.

The theft conviction against Williams last year centered on his removal of computer monitors from a public building, according to a report on the trial from The Forney Post newspaper. Hasse prosecuted the case, according to the paper.

Police investigating the slayings previously have arrested others on a charge of making a public threat.

The Texas Rangers arrested a man on April 4 accused of using Facebook to threaten violence against an assistant district attorney. Two days earlier, authorities arrested another man suspected of making a telephone threat against a county official on a tip line set up for the case.

Kaufman County Sheriff's spokesman Lieutenant Justin Lewis, whose department is the lead investigative agency on the case, did not return calls to Reuters.

Kim Kardashian arrives for key divorce hearing

LOS ANGELES (AP) ? Kim Kardashian appeared in court Friday for a hearing aimed at settling her divorce case from NBA player Kris Humphries.

The reality star sat in the jury box, hands crossed on her lap, as the case was called. A judge sealed the proceedings, citing rules mandating confidentiality for divorce settlement discussions.

If an agreement cannot be reached, a public trial on the couple's marriage is schedule to begin on May 6. Humphries, who is seeking an annulment based on his claim the pair's 72-day marriage was fraudulent, did not appear in court but was represented by three attorneys.

The "Keeping Up With the Kardashians" star arrived under heavy security and was brought into the courtroom through a back entrance. Her hair was tied back in a ponytail and she kept her hands crossed on her lap while she listened to Judge Hank Goldberg explain to reporters that the hearing would be closed.

"I always wanted to be a juror," she joked to deputies before taking her seat.

Kardashian and Humphries are both expected to testify at the trial, which will focus on their relationship and whether elements of it were staged for the show "Keeping Up With the Kardashians."

The Brooklyn Nets power forward has not yet laid out his specifics to support his fraud claim. He claims the marriage should be annulled because Kardashian only married him because of her reality show.

Kardashian is expecting a child with boyfriend Kanye West later this year. Kardashian, wearing white pants and a long gray jacket, was not accompanied by her sisters or West to court.

Kourtney Kardashian and Khloe Kardashian are not on their sister's proposed witness list, but their mother, Kris Jenner, will likely testify about the pair's relationship. Humphries has not yet filed his witness list for the trial, which is expected to last a week.
